  The autotools' page ( https://autotools.io/autoconf/finding.html ) says it has something to do with the incompatibility of the C dialects.. Could it be true? and if so, which C dialect should I use?

yeah, latest OpenGrm NGram library was released a couple of months ago, built to be compatible with OpenFst 1.5.1, and we haven't got the 1.5.2 compatible version out yet (working on it). If you are really interested in the ngram library, you'll have to work with 1.5.1 for the next week or two. We are planning a fairly large release quite soon, so keep an eye peeled for that. But in the meantime, you can access OpenFst version 1.5.1 on openfst.org.
